To quote The Caterer: “Tom James, managing director of restaurant chain Bill’s, where there has been something of a revolution taking place within data and KPIs. The company has used restaurant management software from Tenzo to create a leaderboard with live data that shows, for example, if there is an under-indexing on desserts mid-shift. But he cautions: “You can get away from people if you have far too much technology. Can you put it through a filter and make the guest happier? You have to link team metrics with guest metrics. If our guests are happy, we attract more covers. Our obsession is with cover growth and that is my top metric for success at Bill’s. If that drops, our options reduce.”
